Sommelier is a non‑custodial, decentralized asset-management protocol (built on the Cosmos SDK) that runs adaptive, off‑chain strategist-driven vaults called “Cellars” and transmits rebalance instructions to EVM chains via bridges. SOMM is the governance token; a validator set reaches consensus on rebalances while users retain custody of funds.
